Heat the oven to 300°F and arrange a rack in the middle.
Place oats brown sugar cinnamon, salt, and chopped nuts/seeds (if raw) in large bowl and stir to combine.
Place honey, oil, and vanilla in small bowl and stir to combine. Pour over oat mixture and mix until the oats are thoroughly coated.
Spread mixture in even layer on a rimmed baking sheet. Bake 15 minutes, then stir to break up chunks. Continue baking until granola is very light golden brown, about 15 minutes or more.
Remove from oven and place baking sheet on wire rack to cool. Stir occasionally to keep large clumps from forming.
Add fruit and pre-toasted nuts/seeds to mixture and toss to combine
