Ingredients

  • 4 slices Bacon, diced
  • 1 diced Onion
  • 3 cloves Garlic
  • 2 stalks Celery
  • 1 14.5 oz. can Diced Tomatoes
  • 2 tbsp. Tomato Paste
  • Salt, to taste
  • Black Pepper, to taste
  • 1 tsp. Italian Red Pepper Flakes
  • 1 tsp. Dried Thyme
  • 1 tsp. Dried Oregano
  • 1 tbsp. Sugar
  • Cooked White Rice, for serving
Instructions

  1. Cook bacon pieces over medium high heat in frying pan until fat is rendered. Remove bacon from the pan, leaving the fat behind.
  2. Sauté onions and garlic in rendered bacon fat until softened.
  3. Add diced tomatoes, tomato paste, salt pepper, red pepper flakes, thyme, oregano, and sugar. Simmer until sauce thickens, but has not fully reduced.
  4. Serve over cooked white rice.
