Ingredients
- 4 slices Bacon, diced
- 1 diced Onion
- 3 cloves Garlic
- 2 stalks Celery
- 1 14.5 oz. can Diced Tomatoes
- 2 tbsp. Tomato Paste
- Salt, to taste
- Black Pepper, to taste
- 1 tsp. Italian Red Pepper Flakes
- 1 tsp. Dried Thyme
- 1 tsp. Dried Oregano
- 1 tbsp. Sugar
- Cooked White Rice, for serving
Instructions
- Cook bacon pieces over medium high heat in frying pan until fat is rendered. Remove bacon from the pan, leaving the fat behind.
- Sauté onions and garlic in rendered bacon fat until softened.
- Add diced tomatoes, tomato paste, salt pepper, red pepper flakes, thyme, oregano, and sugar. Simmer until sauce thickens, but has not fully reduced.
- Serve over cooked white rice.
