Ingredients

  • 2 lb. Oxtail
  • 3 tbsp. Vegetable Oil
  • 1 Onion, chopped
  • 2 Carrots
  • 1 stalk Celery
  • ¼ head Cabbage
  • 1 Bay Leaf
  • 1 tsp. Dried Thyme
  • Parsley
  • 4 cups Beef Broth
Instructions

  1. Chop onion, carrots, celery, and cabbage
  2. Brown oxtail in safflower oil
  3. Add in onion, carrots, celery and cabbage, bay leaf, thyme, and parsley. Cover with beef broth.
  4. Simmer on low heat for 4 hours until meat is tender.
  5. Remove bones before serving.
