Ingredients

  • cups All-Purpose Flour, + extra for board
  • ½ tsp. Salt
  • 1 tsp. Xanthan Gum
  • ¾ cup cold Butter
  • 6 tbsp. or more cold Water
Instructions

  1. Mix flour, salt, and xanthan gum together.
  2. Cut in butter with a pastry cutter. Chop and combine mixture until it resembles coarse meal or tiny peas.
  3. Sprinkle cold water over flour mixture 1 tbsp at a time. Mix lightly until pastry holds together when pressed gently into a ball.
  4. Roll out on a floured board.
