Ingredients
- 2½ cups All-Purpose Flour, + extra for board
- ½ tsp. Salt
- 1 tsp. Xanthan Gum
- ¾ cup cold Butter
- 6 tbsp. or more cold Water
Instructions
- Mix flour, salt, and xanthan gum together.
- Cut in butter with a pastry cutter. Chop and combine mixture until it resembles coarse meal or tiny peas.
- Sprinkle cold water over flour mixture 1 tbsp at a time. Mix lightly until pastry holds together when pressed gently into a ball.
- Roll out on a floured board.
